fruity flapjacks

Flapjacks are a great snack for kids and adults, one that helps to keep them feeling fuller for longer but some are so loaded with sugar that actually have the opposite effect and just give you a sugar high followed by a sugar crash. These delicious, healthy, fruity flapjacks are perfect for those that want a tasty treat without the nasties and they are super easy to make too.

You will need

  • 100g butter
  • 100g golden syrup
  • 50g/mixed seeds, such as pumpkin, sunflower, linseed and sesame
  • 150g dried fruit
  • 250g/9oz porridge oats 
  • 1 egg

Method

  1. Preheat the oven to 200C.
  2. Melt the butter and syrup together in a saucepan over a low heat, stirring regularly.
  3. Remove from the heat and stir in the seeds and dried fruit.
  4. Beat the egg and then add to the mixture.
  5. Mix in the oats.
  6. Transfer the mixture to a lined baking tin and bake for 18–20 minutes, or until golden.
  7. Wait for them too cool before slicing.

You could wash this down with a lovely homemade tropical smoothie too for some extra vitamins.
